The salmon scores points for its abundance of omega-3 fatty acids. These healthy fats keep our heart healthy by protecting the blood vessels and positively influencing our cholesterol level. In addition, our ability to concentrate is improved, as the fatty acids improve the transmission of stimuli in the brain.

A colourful salad plate goes well with the salmon

4 Salmon steak (each about 200 grams)
½ lemon (juiced)
salt

1 Tbsp butter
100 grams onions
1 Tbsp butter
125 milliliters dry white wine
300 milliliters Vegetable broth
freshly grated Nutmeg
1 tsp cornstarch
100 grams Crème fraiche
1 Tbsp chopped parsley

Tarragon
4 Hash browns

Preparation steps

Salt the salmon fillets, sprinkle with pepper and lemon juice. Peel the onions and cut into small cubes, saute in butter, pour in the wine and let boil. Then season with salt and pepper, pour in the broth, cover and let simmer for approximately 10 minutes. Place the salmon filets in hot butter and saute on each side for about 3 minutes.

Peel the carrot, cut the green down and blanch in boiling salted water for 3 minutes.

Puree the sauce with a hand blender and season with nutmeg and salt to taste if necessary. Stir the cornstarch in 1-2 teaspoons of water until smooth, add to the sauce, bring to a boil and mix with the crème fraîche. Stir in the parsley. Serve the salmon steak on warmed plates and drizzle with the sauce.

Add the carrot with tarragon as garnish and serve with one hash brown.
