- 4 Salmon fillet (each about 200 grams, with skin)
- 6 Tbsps Caper
- 4 Tbsps flat-leaf parsley (cut into strips)
- salt
- freshly ground peppers
- olive oil (cold pressed)
- 2 Tbsps butter
- 2 onions
- 8 Lemon peel

Preparation steps
1.
Rinse capers under cold running water and drain. Peel onions and cut into rings. Heat 4 tablespoons of oil in a pan and gently melt butter in it. Saute onions until golden brown. Add capers and saute briefly. Remove pan from heat.

Brush salmon fillets with a little oil and season with salt and pepper. Grill on a table grill or on barbecue, skin side first, for about 3-4 minutes. Turn over and grill for 30 seconds. Arrange salmon on plates and drizzle with caper sauce. Season with freshly ground pepper and garnish with parsley and lemon wedges. Serve.
