2 Salmon (with skin, each about 200 grams)
300 grams Seaweed (from the fish store)
lemons (juiced)
1 tsp clarified butter
salt
freshly ground peppers
30 grams preserved lemons (or chutney)

Preparation steps

1.

Remove any bones from the salmon fillets. Season with salt and pepper. Sprinkle with a little lemon juice.

2.

Rinse the seaweed and blanch in boiling salted water for 10 minutes. Season with salt and lemon juice.

3.

Heat the butter in a pan over medium-high heat and saute the salmon fillets for about 2 minutes each side, as desired. 

4.

Arrange salmon on a bed of seaweed. Serve with preserved lemons or chutney.
