Salmon with Pepper Leek Sauce
Rinse salmon steaks in cold water and pat dry and brush with 2 tablespoons of lemon juice. Cover and set aside and let marinate briefly. Rinse leeks, drain and pat dry and cut into rings. Rinse peppers, drain and wipe dry and cut into small cubes. Peel onion and cut into thin rings.
Season salmon with salt and pepper. Heat oil in a pan and fry the salmon over low heat on both sides. Remove salmon from pan and wrap in aluminum foil and keep warm. Add onion rings to pan and sauté in frying oil. Add diced peppers and leek rings and fry for about 5 minutes and stir frequently. Stir in sour cream and season with salt, pepper, cayenne pepper and 2 teaspoons lemon juice. To serve, arrange salmon and sauce on a plate and serve with white bread, if desired.
