Preparation steps

1.

Rinse salmon, pat dry and cut into 24 equal-sized cubes. Mix with lemon juice, season with salt and pepper and place 3 cubes on each skewer.

Grease a grill pan with a little oil and cook the salmon skewers on each side for about 3 minutes.

To serve, place a teaspoon of mayonnaise on each skewer and garnish with tarragon leaves.
