250 grams Smoked salmon
2 lemons
1 sheet gelatin
100 grams Whipped cream
2 Tbsps Yogurt (0.1% fat)
salt
peppers
1 bunch Dill
scallions
8 slices Toast
1 Tbsp Salmon caviar
100 grams lamb's lettuce

Preparation steps

Cut salmon finely and mash with grated lemon zest and lemon juice. Soak gelatin in cold water. Whip the cream. Place gelatin in a small pot, dripping wet. Melt over low heat, mix with a little cream and fold into the remaining cream. Mix cream, yogurt and salmon and season with salt and pepper. Rinse dill, chop fine and fold into the mixture. Refrigerate, covered.

Using a cookie cutter, cut star shapes from the slices of bread. Toast in 1 tablespoon oil in a pan. Spoon mousse into a pastry bag and top the bread with mousse. Garnish with dill, chives and Keta caviar. Rinse lettuce thoroughly, shake dry. Stir together remaining oil, 2 tablespoons lemon juice, season with salt and pepper. Drizzle over the salad and serve with the salmon stars on plates.
