2 Tbsps lemon juice
½ tsp medium-hot Mustard

Preparation steps

1.

Rinse the mache very well and spin dry.

Chop the walnuts coarsely, then toast a dry pan for 1 minute, remove from the pan and set aside to cool.

Cook the bacon until crispy in a dry frying pan.

Whisk together the vinegar with lemon juice and mustard, add the oil and season with salt and pepper.

5.

Toss the vinaigrette and walnuts with the salad to coat and serve in bowls topped with crispy bacon.
