Preparation steps

1.

Rinse, trim, and drain the mache. Toast the walnuts in a dry pan, coarsely chop, and set aside. Fry the bacon until crisp in a separate dry pan, then drain on paper towels.

Mix the vinegar with the lemon juice, mustard, and oil. Season to taste with salt and pepper.

Mix the mache, bacon, and walnuts in a bowl. Drizzle with the vinaigrette, thoroughly combine, then serve in bowls.
