4 Tbsps olive oil
2 carrots (roughly grated)
2 large Zucchini (halved lengthways and sliced)
1 red pepper (cut into narrow strips)
1 yellow pepper (cut into narrow strips)
5 scallions (cut into thin rings)
2 Tbsps Crème fraiche
4 Wheat Tortillas
4 leaves round Lettuce
Chives (for tying)

Preparation steps

1.
Heat the olive oil in a pan and gently fry the carrots, courgettes, peppers and spring onions for around 10 minutes. Season with a little salt and ground black pepper and stir in the crème fraîche.
2.
If desired, heat the tortillas following the instructions on the packet. Then lay a lettuce leaf on top of each tortilla and divide the vegetables between them. Roll up the wraps and tie with chives. Cut on the diagonal and serve immediately.
