Sago Pudding with Passion Fruit

- 100 grams Sago
- 75 grams brown sugar
- 250 milliliters Coconut milk
- 1 pinch salt
- 6 Passion fruit
- Coconut (for garnish)
Preparation steps
Put the sago in a bowl and cover with cold water. Let soak about 1 hour. Drain and place in a pot. Cover the sago with water and bring to a boil. Simmer over low heat for about 10 minutes or until the grain becomes transparent. Drain in a colander, rinse with cold water and drain well.
Combine the sugar with 200 ml (approximately 1 cup) coconut milk and salt in a saucepan and heat while stirring until the sugar has dissolved. Add to the sago and let cool, stirring frequently. Divide mixture among four small glasses and refrigerate for at least 2 hours.
Halve the passion fruit and scrape out the pulp. Turn out the puddings onto plates, top with the passion fruit pulp and drizzle with the remaining coconut milk. Garnish with grated coconut meat and serve.
