80 grams black Olives (pitted)
4 Tbsps olive oil
1 Tbsp Margarine
2 sm cans Saffron (about 0.1 grams)
freshly peppers
Arugula (for garnish)

Preparation steps

1.

Cook the pasta in boiling salted water until al dente. Meanwhile, peel the onions and cut into strips. Chop the olives finely.

2.

Heat the olive oil and margarine in a large frying pan and sweat the onions until soft. Stir in the saffron, reduce the heat and cook until the onions are yellow. 

3.

Add the drained noodles, olives and a ladle of pasta water. Season with salt and pepper. Serve in pasta bowls garnished with arugula.
