- 1 kilogram firm potatoes
- salt
- 1 handful Chives
- 100 grams Boiled ham (sliced)
- 1 onion
- 30 milliliters olive oil
- 5 Tbsps White vinegar
- 300 milliliters Chicken broth
- 3 Tbsps grainy Dijon mustard
- 2 tsps sugar
- freshly ground peppers

Preparation steps
1.
Rinse potatoes and boil in salted water. Drain and let cool to room temperature. Transfer to the refrigerator and chill 3 hours.

Meanwhile, rinse chives, shake dry and thinly cut crosswise. Cut ham into thin strips. Peel onion and slice into rings.

Heat olive oil in a pan. Add ham and onions and fry until onions are translucent. Deglaze with vinegar and broth. Stir in mustard and sugar and bring to a boil. Season generously with salt and pepper.
4.
Peel and slice potatoes. Gently fold ham and onion dressing into potatoes and let marinate about 20 minutes. Season with salt, pepper and additional vinegar, if needed. Just before serving, sprinkle salad with chives.
