- 1 shallot (finely chopped)
- 1 Tbsp parsley (chopped)
- 1 tsp marjoram (chopped)
- 3 cups ground Meat (a mixture of beef, veal or pork)
- 1 egg
- 1 Tbsp English mustard
- 3 Tbsps fresh breadcrumbs
- Oil (for frying)
- 4 ciabatta Rolls
- 1 handful salad
- 2 Tbsps Mayonnaise
- For the relish
- 2 Tomatoes
- 1 Tbsp olive oil
- 1 clove garlic cloves
- 1 Tbsp Chili sauce
- 2 Tbsps Ketchup
- 1 tsp brown sugar
- 1 dash lemon juice
- 1 pinch cayenne pepper
Preparation steps

For the relish, drop the tomatoes into boiling water for a few seconds, then skin, quarter, deseed and dice. Heat the oil and sweat the garlic until translucent. Add the tomatoes and remove from the heat. Stir in the chilli sauce and ketchup. Add sugar, lemon juice, a pinch of salt and cayenne pepper to taste. Cool to lukewarm.

For the burgers, heat 1 tbsp oil and sweat the shallot until translucent. Add the chopped parsley and marjoram and leave to cool slightly. Then mix with the mince along with the egg and mustard. Add enough breadcrumbs to make a workable mixture that isn't too soft. Season well with salt and pepper.

Shape into burgers and fry in oil in a frying pan for about 2-3 minutes each side

Split the ciabatta rolls. Wash and dry the salad leaves and tear into smaller pieces. Fill the rolls with salad leaves, add a burger to each and top with mayonnaise and ketchup. Put the other half of the roll on top and serve.
