- 1 ¾ cups Feta (crumbled)
- 2 tsps fresh oregano (minced)
- 2 tsps fresh rosemary (chopped)
- freshly ground Black pepper (to taste)
- 1 Tbsp fresh lemon zest (finely grated)
- 16 ozs ground lamb
- Oil (for grill grate)
- 4 sandwich Rolls
- Arugula (or lettuce leaves)
- For Tomato-Caper Relish
- ½ cup Tomatoes (peeled; seeded and diced)
- ½ cup Tomatoes (peeled; seeded and diced)
- ¼ cup Red onions (diced)
- ¼ cup Caper
- 1 Tbsp fresh Chives (finely snipped)
- 1 Tbsp olive oil
- 1 Tbsp fresh lemon juice
- 1 clove garlic cloves (minced)
- salt (to taste)
- freshly ground Black pepper (to taste)
Preparation steps

In a medium bowl, combine feta cheese, oregano, rosemary, pepper, and lemon zest. Add ground lamb and mix gently using clean hands. Shape into four thick patties.

Heat grill to medium-high heat. Oil cooking grate. Grill burgers, turning once, until cooked through and browned on both sides, about 5 to 6 minutes on each side.

Split rolls and toast cut side down on grill until lightly browned. Top burgers with tomato-caper relish and arugula, if desired.

In a large nonreactive bowl, combine all the above ingredients and refrigerate. Can be made one day ahead. Spoon over burgers.
