2 teaspoons fresh oregano (minced)
2 teaspoons fresh rosemary (chopped)
freshly ground Black pepper (to taste)
1 tablespoon fresh lemon zest (finely grated)
16 ounces ground lamb
Oil (for grill grate)
4 sandwich Rolls
Arugula (or lettuce leaves)
For Tomato-Caper Relish
½ cup tomatoes (peeled; seeded and diced)
½ cup tomatoes (peeled; seeded and diced)
¼ cup Red onions (diced)
¼ cup Caper
1 tablespoon fresh Chives (finely snipped)
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 clove garlic cloves (minced)
salt (to taste)
freshly ground Black pepper (to taste)

Preparation steps

In a medium bowl, combine feta cheese, oregano, rosemary, pepper, and lemon zest. Add ground lamb and mix gently using clean hands. Shape into four thick patties.

Heat grill to medium-high heat. Oil cooking grate. Grill burgers, turning once, until cooked through and browned on both sides, about 5 to 6 minutes on each side.

Split rolls and toast cut side down on grill until lightly browned. Top burgers with tomato-caper relish and arugula, if desired.
