Rose Fish En Papillote
Rinse fish, pat dry and cut into 8 equal pieces. Melt 40 grams (approximately 1 1'2 ounce) of butter and butter 2 pieces of parchment paper with it. Place two pieces of fish on each paper piece, season with salt and pepper. Rinse tomatoes and cut into 8 slices. Spread fish with tomato slices and top with remaining fish. Spread with remaning butter and arrang ethree parsley leaves per fish.
Cut lemon into slices and arrange on fish. Fold paper and seal well. Bake in preheated oven at 175°F (approximately 350°F) for about 25 minutes. Transfer to plates and unfold carefully. Garnish with remaining parsley and serve.
