- 2 Romaine lettuce
- 4 Tbsps scallions
- 2 Tbsps scallions
- 100 grams soybean sprout
- 200 grams Cherry tomatoes
- 1 ripe Avocado
- 2 Tbsps Sour cream
- 4 Tbsps Natural yogurt
- 1 Tbsp lemon juice
- salt
- Sambal oelek
Preparation steps

Trim the romaine, rinse and cut into strips. Mix in a bowl with the scallions and chives. Then arrange on 4 plates. Blanch the bean sprouts in a colander with boiling water, rinse in cold water and drain.

Rinse the cherry tomatoes, cut in half, remove the stalks and cut the tomatoes into slices. Cut the avocado in half, unscrew the seed, gently push the pulp from the peel and cut into thin slices. Drizzle with lemon juice.

Mix the sprouts, tomato and avocado with salad and transfer to plates. For dressing, mix the sour cream with the yogurt and lemon juice, then season with salt and Sambal Olek. Drizzle the salad with the dressing and serve immediately.
