- 1 Romaine lettuce
- 1 Fennel
- 250 grams Red Grape
- 100 grams Pecan
- 3 Tbsps brown sugar
- salt
- freshly ground peppers
- olive oil (cold pressed)
- apple cider vinegar

Preparation steps
1.
Rinse the lettuce and spin dry. Remove the outer, hard leaves and tear the remaining leaves into bite-size pieces. Rinse the fennel and cut into thin strips. Rinse and halve the grapes.

In a small pan, caramelize the sugar over low heat, then add the pecans and toss with the sugar. Remove them from the pan individually (so they do not stick together) and allow to cool.

Mix 4 tablespoons of oil, 2 tablespoons water, 3 tablespoons vinegar together and season salt and pepper to make a vinaigrette. Arrange the lettuce, fennel and grapes on plates. Drizzle with the vinaigrette and serve with caramelized pecans.
