Roasted Whole Chicken
Rinse chicken thoroughly and pat dry. Season the inside with salt and pepper, stuff with parsley sprigs and butter and tie or truss with kitchen twine.
Thread chicken on a skewer.
Secure both sides of the chicken with the skewer.
Tie legs together. Mix oil with some salt and pepper and brush onto chicken. Preheat oven to 180°C (approximately 350°F). Cook, checking frequently, until golden-brown, about 1 hour and 15 minutes.
