Preheat the oven to 180°C (approximately 350°F).

Rinse the chicken, pat dry and season (inside and out) with salt and pepper. Rinse the rosemary and shake dry. Rinse the lemon and orange under hot water and cut into pieces. Mix the lemon, orange and rosemary. Fill the chicken with the mixture. Secure with toothpicks and place in a greased roasting pan. Cook for about 1 hour.

Increase the oven temperature to 200°C (approximately 400°F) and cook for another 20 minutes. Occasionally sprinkle with the juices from the pan. Remove from the oven and serve hot.
