2 Tbsps olive oil
1 splash dry white wine

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Shuck the oysters and loosen the meat from the shell. Clean the shell and place the meat back onto the halves. Place on a baking sheet. Peel and finely dice the onion. Finely dice the pancetta also. Clean the mushrooms and cut into smaller pieces if necessary. Sweat the onion and pancetta for 1-2 minutes in the oil. Add the chantrelles and cook another 1-2 minutes. Deglaze with the wine, and season to taste with pepper. Top the oysters with the mushrooms mixture. Place the oysters in the oven, and roast for 2-3 minutes.
