- 500 grams Oyster mushrooms
- 1 Tbsp Pastry flour
- 2 eggs
- salt
- peppers
- breadcrumbs (for coating)
- Frying oil
- Lollo rossa (for serving)
- 2 Tbsps scallions (or your choice of finely chopped herbs)
Preparation steps

Place the oyster mushrooms between two pieces of plastic wrap and pound thin with a meat mallet or heavy glass. Dust the mushrooms with flour. Beat the eggs and season with salt and pepper. Dip the mushrooms into the egg mixture and then dredge in the breadcrumbs.

Fry the mushrooms in hot oil until golden brown. Drain on paper towels. Serve on a bed of lettuce and garnish with chives or other fresh herbs.
