8 cups Parsnips (peeled and cut into bite-sized pieces)
2 Tbsps vegetable oil
2 Tbsps butter
2 Tbsps honey
1 Tbsp lemon juice
2 Tbsps fresh parsley (chopped)
1 Tbsp Chives (chopped)

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Place the parsnips on a baking tray and mix with the oil. Season with salt and roast for around 35 minutes until almost done. Turn once.
3.
To make the glaze, place the butter, honey and lemon juice in a pot and heat gently. Brush onto the parsnips and roast at 240°C (220°C in a fan oven), 475°F, gas 9 until golden brown. Alternatively use the grill function. Serve garnished with the parsley and chives.
