- 1 Turkey thigh (about 800g)
- salt
- freshly ground peppers
- 4 Tbsps olive oil
- 4 tsps chopped rosemary
- ½ cup dry white wine
- 4 cloves garlic cloves
- 18 ozs potatoes (cut into chunks)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4.
2.
Rub the turkey thigh with salt and pepper.
3.
Heat the oil in a roasting tin and quickly brown the meat on all sides. Add the rosemary, deglaze with wine, then cook in the oven for 45 minutes.
4.
Add the potatoes and whole garlic cloves. Baste with the roasting juices and cook for a further 40-50 minutes until the potatoes are golden and the turkey is cooked through with no pink juices when pierced with a knife.
5.
Garnish with rosemary.
