- 1 kilogram Pork loin (with rind)
- 2 sprigs Basil
- 2 sprigs thyme
- 4 sprigs parsley
- 2 sprigs rosemary
- 6 Tbsps olive oil
- 2 Tbsps vegetable oil
- 400 milliliters Beef broth
- 2 Fennel bulb
- salt
- freshly ground peppers

Preparation steps

Preheat oven to 180°C (approximately 350°F). Rinse meat, pat dry and tenderize. Rinse herbs, shake dry, pluck off leaves and finely chop. Mix herbs with oil and spread on meat. Roll up tightly, secure with kitchen twine and place in an oiled roasting pan. Bake in preheated oven for about 45 minutes. If necessary, pour a little broth over rind.

Rinse fennel and cut into 1 cm (approximately 1/2 inch) slices. Place around roast. Pour in broth and season with salt and pepper. Cook for another 60 minutes. Remove from oven, cut kitchen twine and slice. Serve with fennel and a fresh apple and celery salad if desired.
