Preparation steps

1.
Heat the oven to 240°C (220° fan) 475°F gas 9.
2.
Season the skin of the pork with salt, then put into a roasting tin and roast for 20 minutes.
3.
Reduce the oven temperature to 190°C (170° fan) 3750°F gas 5 and roast for a further 30 minutes, per 450g|1lb.
4.
Leave to rest in a warm place for 15-20 minutes, before carving into slices. Sprinkle with sage to garnish.
