1 kilogram Pork butt (boneless)
4 garlic cloves
freshly ground Black pepper
1 kilogram coarse Sea salt

Preparation steps

1.

Rinse and pat dry pork. Peel garlic and squeeze through a garlic press. Spread meat with garlic and season with pepper. Wrap in plastic wrap and refrigerate overnight.

Spread sea salt iuntil about 2 cm thick (approximately 3/4 inch) in a baking sheet. Bake in  preheated oven at 220°C (gas mark 4-5, fan: 200°C) (approximately 425°F) for about 15 minutes. Pat dry pork and place onto salt. Roast for about 1 3/4 hours. Turn off oven and let meat rest for 10 minutes in the oven. Remove meat from the oven, slice and serve.
