1 Pork tenderloin (800 grams)

2 Tbsps vegetable oil
½ organic Orange (Zest and juice)

Preheat oven to 200°C (approximately 400°F). Rinse pork, pat dry and trim. Season strongly with salt and pepper. Heat oil in a nonstick pan and carefully add pork.

Sear pork on all sides for about 5 minutes.

Remove pork and place on a rack. Place in a roasting pan and roast for 15-20 minutes or until done.

In pan used to sear pork, deglaze with orange juice and briefly boil with orange zest.

Add pork back to pan and let sit for 1-2 minutes in orange sauce. Slice and serve.
