Preparation steps

Preheat the oven to 140°C (approximately 300°F).

Rinse the fillets and pat dry. Season with salt and pepper, brown in hot oil and remove from the pan. Roast on a rack in a pan in the oven depending on meat thickness and desired doneness about 40-50 minutes (internal temperature: 55-60°C or approximately 140°F).

Pour the fat from the pan, then pour in the stock and the red wine. Let boil down to about half and remove from the heat. Rinse the strawberries, trim, cut into pieces and add to the sauce. Season with the jelly, salt and pepper.
