Preparation steps

Preheat oven to 120°C (approximately 250°F).

Remove meat from refrigerator about 30 minutes before grilling so it becomes more tender when cooked. Rinse, pat dry, season with salt and pepper and sear in a grill pan in hot oil on both sides.

On a rack (including drip pan underneath) simmer in the oven depending on the desired degree of cooking for 15-30 minutes.

Drain fat from drip pan and caramelize until golden brown with powdered sugar in pan drippings along with sliced ​​garlic. Deglaze with red wine. Allow to simmer and add beef broth. Allow to boil down 4-5 minutes and season with salt and pepper. Strain through a sieve and stir butter pieces into the hot sauce. Season to taste.

Rinse and trim artichokes, remove hard outer leaves, remove the stem, peel and (remove, if necessary, the hairy choke and thorny inner leaves) depending on the size cut into quarters or eighths. Peel the onion, halve and cut into fine strips. Fry artichokes in a hot pan for 2-3 minutes in olive oil. Then add the onion and cook for another 5 minutes over medium heat. Finally, add parsley, mix well and season with salt, pepper and lemon juice. Serve roast beef together with artichokes.
