150 grams cooked Rice
200 grams Snow peas
1 Mango
2 scallions
8 shrimp (ready to cook with tails)
2 chopped garlic cloves
2 Tbsps vegetable oil
2 Tbsps golden raisin
3 Tbsps White vinegar
2 Tbsps lemon juice
1 pinch sugar
5 Tbsps olive oil
salt
peppers (freshly ground)
1 Tbsp chopped cilantro
mint (for garnishing)

Preparation steps

1.

Soak raisins in warm water for about 30 minutes. Rinse snow peas and cook in boiling salted water for about 4 minutes. Drain, rinse with cold water and drain again. Peel mango and pit. Rinse and dry scallions. Cut diagonally into pieces, both green and white parts.

Heat oil in a pan and saute shrimp for about 4 minutes. Add garlic and cook for little bit more. Season with salt and pepper.

Combine olive oil, vinegar, lemon juice, and sugar. Season with salt and pepper. Add chopped cilantro leaves. Drain raisins.

4.

Toss salad ingredients with salad dressing, arrange on plates and serve garnished with cilantro and mint leaves.
