- 350 grams Wide rice noodle
- 8 scallions
- 100 grams baby Spinach
- 200 grams Feta
- 2 Tbsps soy sauce
- 2 Tbsps Hoisin sauce
- 1 pinch brown sugar
- 2 Tbsps Rice vinegar
- 4 Tbsps sesame oil
- freshly ground peppers

Preparation steps
1.
Cook rice noodles according to package directions, drain, rinse with cold water and drain again.
2.
Rinse scallions, trim and cut diagonally into pieces. Rinse spinach, trim and spin dry. Crumble feta cheese.
3.
Mix soy sauce in a bowl with hoisin sauce, sugar, rice vinegar and oil and season with pepper. Mix all prepared ingredients in a bowl with soy sauce mixture and serve.
