250 grams Glass noodles
600 grams Salmon (ready to cook, skinless)
salt
freshly ground peppers
2 Tbsps Lime juice
2 Tbsps liquid honey
2 Tbsps light Sesame seeds
soybean oil
For Salad Dressing
1 Tbsp honey
4 Tbsps Lime juice
light soy sauce
In Addition
1 handful Sprout (such as radish sprouts)
1 ½ Tbsps pickled ginger

Preparation steps

1.

Place rice noodles into a bowl, add boiling water and soak for about 10 minutes or until noodles are soft. Drain and cut into smaller pieces with kitchen scissors.

Rinse fish, pat dry, season with salt and pepper, drizzle with lime juice. Heat 2 tablespoons of oil in a pan and cook fish until golden brown on all sides. Reduce heat, sprinkle fish with honey and sesame seeds and remove from heat.

Prepare salad dressing. Combine honey, lime juice and 3 tablespoons of soy sauce. Rinse sprouts, drain and mix with noodles and pickled ginger. Drizzle with salad dressing and season to taste. Transfer salad to plates, cut fish into 4 equal pieces. Top salad with fish and serve immediately.
