- ⅔ cup all-purpose flour (plus extra for dusting)
- ⅓ cup Corn starch
- 1 Vanilla bean (seeds scrapped out)
- 1 ½ cups milk
- 3 ⅓ cups Rhubarb (sliced)
- powdered sugar

Preparation steps
1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and grease a baking dish with butter.
2.
Separate the eggs and beat the whites with a pinch of salt. Mix together the egg yolks, flour, cornflour, vanilla seeds and the milk. Fold in the egg whites.
3.
Dust the rhubarb slices lightly with flour and fold into the mixture. Transfer to the prepared baking dish and bake for 30-35 minutes.
4.
Remove from the oven and serve warm dusted with icing sugar.
