120 grams softened butter
120 grams sugar
1 egg
½ Vanilla bean (mark)
250 grams Pastry flour

150 milliliters milk
red Food coloring
2 tablespoons cocoa powder
40 grams ground almonds

40 grams butter
3 tablespoons sugar
150 grams marshmallow cream (finished product)

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.

For the cookies: In the bowl of an electric mixer, beat the butter with the sugar until fluffy. Slit the vanilla bean lengthwise and scrape the seeds into the bowl along with the egg and mix well. Stir together the flour and baking powder and add to the bowl along with the milk, food coloring, cocoa and almonds, beat until smooth. With a spoon, drop 30 mounds of batter onto the baking sheet, spacing them 2 inches apart. Bake until set, about 15 minutes. Remove from the oven and carefully transfer to a wire rack to cool.

For the cream filling: Beat the butter with the sugar until white and creamy. Add the marshmallow creme and spread the mixture on the flat side of half of the cookies. Top with a second cookie, rounded side up and chill until ready to serve.
