- ⅓ cup cocoa powder
- 2 ¾ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp Baking powder
- 1 pinch salt
- ½ cup unsalted butter
- ¾ cup dark brown sugar
- 1 egg
- 1 tsp vanilla extract
- ½ cup milk
- For the filling
- 2 cups powdered sugar
- 4 Tbsps unsalted butter
- 3 Tbsps cream (48% fat)
- ½ tsp peppermint extract
- green Food coloring

Preparation steps
1.
Heat the oven to 170°C (150° fan) 325°F gas 3. Line 3 large baking trays with non-stick baking paper.
2.
Sift together the cocoa, flour, bicarbonate of soda, baking powder, and salt.
3.
Beat together the butter, sugar and egg until smooth and light.
4.
Lightly beat together the milk and vanilla extract.
5.
Add the cocoa mixture to the egg mixture, alternately with the milk mixture and beat until smooth.

Spoon in mounds onto the baking trays, keeping them about 4 cm|2" apart. Spread out the rounds a little.
7.
Bake for about 15 minutes, until firm to the touch. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
8.
For the filling: sift the icing sugar into a bowl and beat in the butter until soft and creamy. Beat in the cream and peppermint extract until the mixture is smooth. Beat in a little food colouring.
9.
Spoon the filling into a piping bag and pipe a generous swirl on the flat side of half the cakes. Place another half, flat side down, on top of the filling then press both halves together lightly.
10.
Sift icing sugar over the tops.
