- 1 Basil
- 4 garlic cloves
- 2 Tbsps soft butter
- 2 Tbsps breadcrumbs
- 1 Tbsp grated Parmesan
- salt
- freshly ground peppers
- 200 grams button Mushroom
- 2 Red onions
- 1 sprig rosemary
- 100 grams pitted green Olives
- 8 Tbsps olive oil
- 6 bay leaves
- 4 kitchen-ready Red mullet fillets (each 350 grams)
Preparation steps

Chop basil leaves very finely, mix with butter, breadcrumbs and Parmesan and season with salt and pepper. Peel 2 garlic cloves, squeeze through a press and mix into crumb mixture.

Trim mushrooms and halve or quarter depending on size. Peel the onions and remaining garlic and chop finely.

Heat olive oil in a large skillet. Add mushrooms, chopped onion, chopped garlic, rosemary and bay leaves and fry about 5 minutes.

Place olives and mushroom mixture in a large greased baking dish.

Rinse red mullet, pat dry, season with salt inside and out and put on the vegetables. Distribute the basil-breadcrumb mixture evenly over the fish. Bake on the center rack in a preheated oven 180°C (approximately 350°F) until golden brown, about 20 minutes. Serve hot.
