- 2 sprigs thyme (finely chopped)
- 1 mint (finely chopped)
- 1 ½ cups fresh breadcrumbs
- ½ tsp lemon zest
- ½ cup butter (melted)
- Lemon wedge (to garnish)

Preparation steps

Preheat the grill.

Open the oysters and loosen the meat from the shells. Place the meat into one half of the shell.
3.
Mix together the herbs, breadcrumbs and the lemon zest. Stir in the melted butter and season with salt and ground black pepper. If the mixture is too dry add some more butter. Place the oysters on a bed of sea salt (e. g. in a baking dish) and cover with the breadcrumb mixture.
4.
Grill for 3-4 min until golden brown. Serve in a box, garnished with lemon wedges.
