18 ozs mixed Berry (raspberries, blackberries, etc)
14 ozs black Currant juice
1 pc Lemon peel
5 Tbsps sugar
lemon juice
2 tsps cornstarch
mint

Preparation steps

1.

Rinse the berries, pat dry, and remove the currants from the vines. Boil half of the berries with the black currant juice and lemon zest, reduce the heat, and simmer for 5 minutes.

Strain the berry juice through a fine sieve. Mix the cornstarch with 1/2 of the water until smooth. Heat the berry mixture again, and stir in the cornstarch.

3.

Add the remaining mixed berries, and simmer for another 3 minutes. Season with the sugar and lemon juice. Garnish with the mint.
