- 1 ¼ cups all-purpose flour
- 2 tsps Baking powder
- ½ cup sugar
- ½ cup butter (melted)
- 1 egg
- ½ cup milk
- ⅔ cup Blackberry
- ⅔ cup Raspberries
Preparation steps
1.
Heat the oven to 350ºF / 180ºC. Grease a 12-cup muffin tin.
2.
Sift the flour and baking powder into a mixing bowl and stir in the sugar.
3.
Beat the melted butter with the egg and milk and gradually stir into the dry ingredients until just mixed but still slightly lumpy.
4.
Gently stir in the blackberries and raspberries.
5.
Spoon into the muffin cups, filling almost to the top.
6.
For the topping: Mix all the ingredients together and spoon a little over the top of each muffin.
7.
Bake for about 25 minutes until risen and firm.
8.
Leave to stand for 5 minutes, then place on a wire rack to cool.
