- For the meringue
- 5 egg whites
- 1 ⅓ cups caster sugar
- 1 tsp Vinegar
- 1 tsp vanilla extract
- 4 tsps Corn starch
- 2 tsps Corn starch
- 1 ⅓ cups whipping cream (well chilled)
- 4 cups fresh Raspberries

Preparation steps
1.
Heat the oven to the lowest temperature and line a baking tray with grease-proof paper.
2.
Beat the egg white using a hand whisk on the highest setting until stiff. Add 4 tbsp water and continue to beat. Gradually add the sugar. Turn down the speed and stir in the vinegar, vanilla essence, cornstarch and cornflour.
3.
Place the mixture loosely on the prepared baking tray and spread into a circle approx. 26 cm diameter creating a well in the middle. Bake for 50-60 minutes, remove from the oven and leave to cool completely.
4.
Whip the cream to soft peaks and then spoon into the well and pile the raspberries on top. Serve immediately.
