160 grams sugar

Preparation steps

1.

Rinse lemon in hot water. Squeeze juice from lemon. Rinse raspberries and pat dry. Place the lemon juice, raspberries and sugar in a saucepan to stew. Press through a fine sieve into a clean saucepan. Place on the stove and reduce slightly over low heat, about 2-3 minutes. Allow to cool.

In a bowl, stir 2/3 of the puree with the cream cheese until thoroughly combined. Place in a shallow container and put in the freezer for 2 hours, stirring occasionally. Alternatively, freeze the mixture according to instructions for an ice cream machine.

3.

Fold the remaining puree into the ice cream mixture. Freeze until ready to serve.
