- 2 Tbsps Orange juice
- 2 Tbsps White vinegar
- 1 pinch sugar
- salt
- freshly ground peppers
- 3 Tbsps olive oil
- 200 grams lamb's lettuce
- 180 grams button Mushroom
- 1 tsp hot Mustard
- 1 large Organic apple
- 4 Tbsps coarsely chopped Walnut
- 80 grams Farmhouse bread sliced (or dark bread)
- 75 grams Gorgonzola (sliced)
Preparation steps

Mix the orange juice with the vinegar, mustard and sugar and season with salt and pepper. Gradually, drizzle in the oil. Preheat the broiler.

Trim the mache, rinse and drain well. Wipe the mushrooms and slice. Rinse the apple, wipe dry, cut in half, remove the core and cut into thin wedges. Mix the mache, apple slices and mushrooms and toss with the vinaigrette. Divide the salad into bowls and sprinkle with walnuts. Cut the crusts from the bread and cut the slices into several triangles. Top each slice with some Gorgonzola and broil. Place on the salad and serve immediately.
