- Radicchio
- 3 Tbsps Walnut (blanched)
- 2 Figs
- 2 Tbsps white balsamic vinegar
- 2 Tbsps lemon juice
- 1 Tbsp honey
- ½ tsp salt
- freshly ground peppers
- 2 Tbsps Walnut oil (or other nut oil)
- 1 Pear (ripe)
- 8 slices turkey breasts (thinly sliced)
- Parmesan (for shaving)
Preparation steps

Trim, rinse and spin dry the radicchio. Tear leaves into bite-sized pieces. Coarsely chop walnuts. Rinse the figs, pat dry and cut into quarters or wedges depending on size.

Whisk together the white balsamic vinegar, lemon juice, honey and salt and pepper to taste. Whisk in the oil.

Rinse the pear, cut in half, remove the core and cut the flesh into bite-sized pieces. Immediately mix the pear pieces with the dressing. Arrange the radicchio with the figs in a small bowl. Top with pear pieces and sprinkle with nuts. Roll the turkey breast slices tightly and place on the salad. Top with shaved Parmesan and serve.
