- ½ small Radicchio
- Lollo rossa
- 1 carrot
- ½ Celeriac (bulb)
- 1 Beet (cooked and peeled)
- 2 Tbsps Wine vinegar
- salt
- peppers
- ½ tsp sugar
- 1 Tbsp chopped, mixed Fresh herbs
- 2 Tbsps lemon juice
- 4 Tbsps olive oil

Preparation steps

Sort and wash all the salad leaves and spin dry. Tear the leaves into bite-sized pieces. Peel the carrot and cut into matchsticks. Peel the celeriac and cut into matchsticks. Thinly slice the beetroot and arrange on plates. Mix the salad leaves with the carrot and celeriac sticks. Place a portion of the mixed salad on top of the beetroot. Mix the vinegar, lemon juice, salt, sugar, pepper and oil to make a dressing and stir in the herbs. Hand the dressing separately so that everyone can use as much dressing as they wish.
