100 milliliters dry white wine
250 grams Cultured butter

150 grams Pastry flour
150 grams Spelt flour
1 tsp Baking powder
50 milliliters Whipped cream

Preparation steps

Rinse, dry, core, peel and dice quince. Cook with 2 tablespoons sugar and wine in a small saucepan for about 10 minutes. Drain in a colander and let cool.

Meanwhile, grease a springform pan (about 24 cm or 9 1/2 inches) with butter. For the dough, rinse lemon and zest. Combine butter, zest and remaining sugar until light and fluffy. Add eggs, stirring after each one.

Combine both flours and baking powder. Add dry ingredients to butter mixture. Gently stir in cream. Put dough into the pan and smooth it out, spread quince into dough and top with almonds. Bake in preheated oven at 200°C (approximately 400°F) for about 1 hour. Remove, let cool slightly and serve.
