- 4 ripe Quince
- ½ lemon (juice)
- 2 Vanilla bean
- ⅞ cup brown sugar
- 1 cloves
- 1 cup water
- ⅔ cup dry white wine

Preparation steps
1.
Peel, deseed and cut the quinces into wedges.
2.
Put the fruit into a bowl and drizzle the lemon juice over the top.
3.
Cut the vanilla pods open lengthwise and scrape out the seeds.
4.
Put the seeds, sugar, clove, water and wine into a pot and bring to a boil.
5.
Add the quince wedges and cover. Simmer for approximately 30 minutes until tender but not mushy (cooking time may vary).
6.
Serve warm as a dessert or put into a bottle. Close tightly and allow to cool.
