Separate the pineapple fruit from the syrup; reserve syrup in a bowl and cut pineapple slices into pieces.
Whisk the yolks with the sugar, then add the mascarpone. Whisk the egg whites for at least 10 minutes, then fold them gently into the mascarpone mixture.
In an individual, shallow, serving dish, layer a portion of pineapple on the bottom. Dip a few of the lady fingers quickly in pineapple juice and layer over the pineapple. Pour over some of the mascarpone cream. Continue with another layer of pineapple, lady fingers and cream.
Repeat this process for the remaining ingredients, reserve some pineapple for garnish. Refrigerate for at least 2 hours. When ready to serve, garnish with reserved pineapple and mint.
