- 1 cup Orange juice
- ½ cup sugar
- 28 Amaretti biscuits
- 1 ⅓ cups double cream (lightly whipped)

1 Skillet, 1 Baking sheet, 2 Bowls, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Wooden spoon, 1 Sieve, 1 Rolling pin, 1 Salad spinner, 1 Parchment paper, 1 Hand mixer, 1 Small bowl
Preparation steps
1.
Put the rhubarb in a pan with the orange juice and sugar and gently cook for about 5 minutes or until the rhubarb is just tender. Set aside and let cool.

Set 4 amaretti aside for garnishing. Layer the rhubarb and its juice with the remaining amaretti in 4 individual serving dishes.
3.
Spoon over the whipped cream and crumble the reserved amaretti on top to garnish.
