Quick Macaroni and Cheese
Cook the macaroni in boiling salted water until al dente, then drain well. Whisk together the milk, cheese, mustard, and cornstarch. Season the mixture with some salt and pepper. Mix the macaroni into the milk and cheese mixture. Divide the macaroni mixture into 4 microwave safe ramekins. Cook for 2 minutes on high heat, stirring halfway through. The cheese should be melted, and the sauce should have a creamy consistency. If necessary, cook a little longer. Garnish with the chives and freshly cracked black pepper, and serve.
