400 grams macaroni
salt
50 grams butter
2 Tbsps Pastry flour
500 milliliters milk
200 grams grated Cheddar cheese
3 Tbsps grated pecorino romano
cayenne pepper
Nutmeg (freshly grated)
1 tsp spicy Mustard
100 grams breadcrumbs
1 Tbsp finely chopped parsley

Preparation steps

Cook the pasta in boiling salted water until al dente. Then drain and rinse with cold water.

Preheat the oven to 180°C (approximately 350°F).

Melt 30 g (approximately 1 ounce) of butter in a pan. Sprinkle with flour, stir to combine, and let become foamy. Gradually incorporate the milk, whisking constantly. Simmer a few minutes until the sauce is creamy, and has thickened slightly. Add the cheddar and pecorino cheese, and stir until melted and thoroughly combined. Add the mustard and season to taste with salt, cayenne pepper, and nutmeg.

Grease a baking dish with butter. Mix the pasta with the sauce, then transfer to the baking dish. Mix the breadcrumbs with the parsley, and sprinkle over the of the macaroni. Dot the top of the bread crumbs with the remaining butter. Bake for 30 minutes.
